I love these moist pumpkin muffins because they are chock full of wholesome ingredients. Pumpkin puree yes, but also grated carrots, raisins, pecans, coconut oil, chia seeds and a crunchy topping of pepitas, or pumpkin seeds. Wonderful with your morning cup of coffee and a side of your favorite seasonal fresh fruit. The recipe itself makes 9 muffins which freeze very well, too.
