‘Grilled Salmon Sandwiches with Herbed Mayo’

This flavorful summertime sandwich highlights not only homegrown cucumbers and tomatoes from the veggie garden, but perfectly cooked salmon as well.  The salmon gets its nice crust from a coating of brown sugar and paprika; a touch of sweet with the smokiness from the paprika works so well on the grilled fish. Serve some of the grilled salmon fillet on a toasted baguette with fresh veggies and a spread of a quick, homemade herbed mayo.  This is ‘the’ recipe to add to your next grilling menu!
