This is the first of many recipes I can’t wait to try from a new cookbook by Peter Gordon.  A colorful and truly original compilation of seasonal salad recipes, SAVOUR combines ingredients into one plate that you might have never dreamed would work well together.  But they do!  This simple side dish combines cous cous (I used regular cous cous, but the recipe actually called for pearled cous cous), healthy kale, fresh mint and slices of preserved lemon.  With a hint of Middle Eastern-flavorings dotted throughout the cookbook, you’ll enjoy reading about different ways to use and combine your favorite seasonal produce with other unique ingredients in this spectacular book.

Directions:

  1. I used regular, instant cous cous for this dish and instead of pureeing the kale, I sauteed it and added it into the cooked cous cous instead*
