A slice of a classic chess pie is one of my favorite desserts. A simple custard-like pie made with eggs, milk or cream, sugar a touch of vanilla and usually a touch of cornmeal for texture. This rich chess pie has all of those basic ingredients, plus a squeeze of fresh lemon juice and slices of roasted rhubarb. The tart yet sweet taste of the cooked rhubarb lines the baked pastry crust on top of which you pour the chess pie filling. Not only a unique way to use the seasons best rhubarb, but a unique way to liven up a classic chess pie as well.
