I adore bitter greens; everything from radicchio to escarole to broccoli rabe to chicory, you name it. They are great in a quick saute on their own or paired with other flavors that complement their bitter nature. Take this side dish for example—I have paired broccoli rabe with tangy balsamic vinaigrette and plump, sweet dried cheries. And don’t forget the sliced garlic! This is a really tasty flavor combination that you are sure to make again and again.

Balsamic Broccoli Rabe with Dried Cherries
Ingredients:
- 1 Tablespoon extra virgin olive oil
- 1 head of broccoli rabe, ends trimmed, florets and stems cut into bite-sized pieces
- 4 garlic cloves, thinly sliced
- Salt and pepper
- 2 Tablespoons balsamic vinegar
- ½ cup dried cherries
Directions:
- In a large Dutch oven or straight-sided saute pan, heat the olive oil over medium heat. Add in the sliced garlic and saute for 1 minute. Add in the chopped broccoli rabe and season with 1/2 teaspoon of salt and a big grinding of black pepper. Saute for 5-7 minutes or until tender and wilted.
- Remove from the heat and stir in the cherries and balsamic vinegar. Serve warm.
