This lovely vegetarian baked side dish has several of my favorite ingredients: tomatoes, fennel, basil, and cheese. Even though tomatoes are not at their peak this time of year, roasting the cherry tomatoes brings out the tomatoes natural sweetness and also tenderizes them. This sweetness paired with tender slices of baked fennel is divine—as is the pairing of licorice flavors that come from both the fennel and the fresh basil. And to add to these nice flavors, anything topped with gooey Gruyere cheese works for me!
