All you need for this fabulously flavorful side dish is a fresh bunch of broccolini, sliced garlic, olive oil, grated Parmesan and tangy balsamic vinegar. Roasting the broccolini keeps the stalks crisp but tenderizes the florets of the broccolini, and it also crisps up the thin slices of garlic. After the stalks are roasted, I like to finish them off with a splash of rich balsamic vinegar and a sprinkling of salty, grated Parmesan cheese. My Balsamic Broccolini with Parmesan is a healthy but decadent vegetarian side dish.

Balsamic Broccolini with Parmesan
Ingredients:
- 1 head of broccolini, trim the ends
- Olive oil
- salt and pepper
- 3 thinly sliced garlic cloves
- Splash of balsamic vinegar
- 1/4 cup grated Parmesan cheese
Directions:
- Preheat the oven to 400 degrees. Line a small baking dish with parchment or foil. Arrange the broccolini and sliced garlic on the pan in a single layer. Drizzle with 1 Tablespoon of olive oil and a pinch of salt and pepper. Roast for 18 minutes.
- While warm, toss the broccolini with a splash (about 1 Tablespoon) of the vinegar and the grated cheese. Serve immediately.
