It is very important to have a few really tasty salad dressing recipes (along with a couple of Ball jars to shake them in) in your cooking repertoire. A special, homemade dressing can brighten up the simplest of salads. This salad was a tossed green salad made with watercress, Bibb lettuce and Belgian endive, tossed with home grown cherry tomatoes, scallions, and some chopped hazelnuts for a bit of crunch. With fresh herbs on hand in the fridge, I made this Creamy Herb Vinaigrette to dress this salad. A slightly sweet and creamy dressing made from fresh herbs like thyme, basil and tarragon, apple cider vinegar, agave nectar, avocado oil, Greek yogurt, and Dijon mustard. Tangy, sweet, smooth and delectable, this would also be a lovely dressing to drizzle of roasted asparagus, or even over warm potatoes for a modern twist on a potato salad.

Creamy Herb Vinaigrette
Ingredients:
- 1/4 cup apple cider vinegar
- 1/4 cup avocado oil
- Salt and pepper, to taste
- 1 Tablespoon Greek yogurt, plain
- 1 teaspoon Dijon mustard
- 1/2 teaspoon agave nectar
- pinch of crushed red pepper flakes
- 1 Tablespoons fresh herbs, roughly chopped
Directions:
- Whisk the ingredients together until emulsified. Or place the ingredients in a Ball jar, place the cover on, and shake until emulsified.
