Kasseri cheese is a Greek cheese (very similar to halloumi) that is a mixture of sheep and goat’s milk. It is a soft, stringy cheese that melts well and is typically seen in sandwiches like this one, or in the traditional saganaki dish. I decided to grill the cheese until slightly melted and serve it inside whole wheat pita bread along with sliced heirloom tomatoes, red onions, fresh mint, briny capers and homemade cucumber pickles. A light and flavorful Mediterranean pita sandwich that is lovely served with fresh watermelon and a glass of chilled lemonade.

Mediterranean Kasseri Pitas
Ingredients:
- 6 oz. kasseri cheese
- Olive oil cooking spray
- ½ lemon
- Salt and pepper
- 2 whole wheat pita rounds
- 1 tomato, sliced
- Pickles
- Slices of red onion
- Capers
Directions:
- Spray a grill pan with cooking spray. Heat the grill pan over high heat. Place the cheese on the hot grill pan and grill for 1 minute per side. Squeeze the lemon on the cooked cheese, and grind the pepper over the cheese as well. Allow the cheese to cool for just a second and then slice it into 6 pieces.
- Arrange the cheese, pickles, tomato slices, red onion, capers and fresh mint inside of each pita sandwich. Season the tomato with salt if desired. Serve immediately.
