Everyone loves a tender cornbread muffin.  The secret to these moist and flavorful cornbread muffins is the addition of buttermilk and the additional of grated fresh zucchini in to the muffins’ dry ingredients.  A great way to add a taste of summer produce into a traditional quick bread batter, and a great way to add in extra veggies into your dinner menu!
