The next time you’re craving your favorite sandwich flavors but are maybe looking for a lower carb option, turn that sandwich into a hearty salad instead. Here I mixed together all of the flavors of a traditional bacon, lettuce and tomato sandwich and added in some matchstick carrots for crunch and creamy slices of avocado, just because, well—everything is better with avocado. Crispy slices of turkey bacon, juicy cherry tomatoes and tender greens topped with a quick mustard vinaigrette for a tangy bite. A hearty salad that is so delicious, you won’t miss the bread, promise.

BLT Salad
Ingredients:
- Salad greens
- Matchstick carrots
- Sliced avocado
- 2 slices turkey bacon, cooked until crisp
- Cherry tomatoes, halved
- For the vinaigrette: (whisk the following ingredients together until emulsified*)
- 1 teaspoon Dijon mustard
- 2 Tablespoons olive oil
- 1 teaspoon lemon juice or red wine vinegar
- Salt and pepper to taste
