My husband Scott’s favorite type of pie or cake is of the frozen ice cream variety. Who can blame him? Any creamy ice cream flavor poured into a tasty shell or layered in between homemade spongecake…mmm. Not wanting to wait until his next Birthday to make him a special ice cream treat, I decided to make a peanut butter-flavored ice cream pie with a chocolate shell. Simply soften two pints of vanilla ice cream and mix in 1 cup of peanut butter. Pour into a chocolate pie shell lined with chopped peanut butter cups and there you have it. A few hours in the freezer and a homemade, decadent frozen treat awaits you.

Peanut Butter Ice Cream Pie
Ingredients:
- 2 pint vanilla ice cream, softened
- 1 cup peanut butter
- 1 store-bought chocolate pie crust
- 1 cup chopped peanut butter cups
- salted peanuts, for garnish
Directions:
- Place the softened ice cream and peanut butter in the bowl of a stand mixer fitted with the paddle attachment. Blend for a couple of minutes, or until creamy and mixed together well.
- Sprinkle the chocolate pie crust with the chopped peanut butter cups. Pour over the ice cream mixture. Top with peanuts, cover, and freeze for a couple of hours before cutting.
