This gorgeous tart combines three of my favorite sweet treats: sugar cookies, pastry cream and fresh berries. A sweet and doughy sugar cookie crust pressed into a decorative tart pan, filled with chilled almond-flavored pastry cream and topped with your favorite combination of mixed berries. Feel free to make the pastry cream vanilla-flavored or even lemon flavored…whatever your sweet tooth prefers.

Sugar Cookie Tart with Fresh Berries
Ingredients:
- Your favorite sugar cookie dough, store-bought or homemade
- Pastry cream recipe: http://www.thekitchn.com/how-to-make-pastry-cream-168126 (add 1/2 teaspoon almond extract to make almond-flavored*)
- Mixed berries
- Fresh mint, for serving
Directions:
- Preheat the oven to 350 degrees. Spray a tart pan with cooking spray; press your favorite sugar cookie dough into the pan, up the sides as well. Score the dough with a fork.
- Bake in the preheated oven for 20-25 minutes, or until the crust is lightly browned. (The crust may puff up in the pan while baking, but while it cools on the baking rack it will collapse back down into shape*) Allow the crust to rest on a baking rack until completely cooled.
- In the meantime, follow the following recipe for the pastry cream: http://www.thekitchn.com/how-to-make-pastry-cream-168126 (Feel free to add in ½ teaspoon almond extract or lemon zest/juice to make the cream the flavor you prefer*) Allow the cream to chill completely in the fridge.
- Spoon the chilled cream in to the cooled crust. Top with fresh berries, chill and serve.
