A sharlotka is a traditional Russian dessert of layered Granny Smith apples topped with a light pancake-like batter –elegantly dusted after cooking with a powdery layer of confectioner’s sugar. Cooked in spring form pan and unmolded for a dramatic appearance, this simple cake is similar in construction to a French clafouti and the results are similarly decadent. I love this recipe for its focus on the thinly sliced apples, its simplicity, and its minimal ingredient list. Tasty on its own, but a scoop of creamy vanilla ice cream is never a bad idea…
