Every bubbly and sweet sip of a classic Italian Rossini will have you transported to a traditional outdoor Italian café. A unique drink of crisp Prosecco, the sweet orange flavor of Gran Marnier, a dash of simple syrup and the freshness of pureed strawberries, this lovely drink is hands down one of the most refreshing of summertime cocktails.

Rossinis
Ingredients:
- 1 bottle of chilled Prosecco
- 1 pint strawberries, hulled and pureed (extra sauce is wonderful over frozen yogurt or ice cream, or even in a Greek yogurt parfait)
- 6 teaspoons of simple syrup
- 6 teaspoons of Gran Marnier
- Sliced strawberries, for garnish
Directions:
- Press the pureed berries through a fine mesh sieve to remove any seeds. At the base of each champagne glass place 1 Tablespoon of the puree, 1 teaspoon of Gran Marnier, and 1 teaspoon of simple syrup. Stir this mixture together with a long teaspoon. Top with the chilled Prosecco, garnish with a strawberry slice, and serve.
