Hands down, my favorite cookies in the world are white chocolate macadamia nut cookies. Everything about these decadent cookies is perfectly decadent—the white chocolate chips are sweet and melt in your mouth instantly, and the crunch and buttery texture of the macadamia nuts is heavenly. To make these tasty treats even more delicious, I have added some oatmeal into the cookie batter not only for added texture, but a bit of whole grain goodness.

White Chocolate Macadamia Nut Cookies
Ingredients:
- 1 stick unsalted butter, room temperature
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 1 egg
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- Pinch of coarse salt
- ½ cup old fashioned oats
- ½ cup white chocolate chips
- ½ cup macadamia nuts, coarsely chopped
Directions:
- Preheat the oven to 350 degrees. Line two baking sheets with parchment paper. In a large mixing bowl, blend the room temperature butter and sugars together with a hand mixer until creamy; this will take 2-3 minutes. Add in the egg and the vanilla, beating to combine.
- In another large mixing bowl whisk together the flour, baking soda, baking powder, salt and oats. Gradually add this mixture (again with the hand mixer) into the butter-egg mixture until just combined. Fold in the chocolate chips and macadamia nuts into the batter.
- Drop the batter into small rounds onto the prepared baking sheets, spacing the cookies about 2 inches apart. Lightly flatten each round with the back of a spoon. Bake in the preheated oven for 16-18 minutes, or until lightly browned. Allow the cookies to cool on a cooling rack before enjoying.
