Compound butters are a unique way to add an extra ‘pop’ of flavor to a variety of dishes. Simply bring unsalted butter to room temperature, mix in whatever herbs, spices or flavorings you desire, roll into a log and refrigerate until ready to use. Some of my favorite ways to use compound butters are in mashed potatoes, on roasted vegetables, inside of a French omelet, or on top of a perfectly cooked steak. One of my recent purchases from www.iGourmet.com was a decadent black truffle butter made by Aux Delices des Bois. Fragrant and full of that earthy, umami mushroom taste that only truffles can impart, a slice of this butter on top of a grilled steak is positively delightful. As it melts onto the plate, each bite of steak becomes covered with the taste of black truffles and creamy melted butter. It doesn’t get much better than this.
