No one can resist a homemade burger grilled to perfection on a charcoal grill– especially a burger with flavors like this one. My Turkey-Spinach Burger is a flavorful burger made with ground turkey, fresh spinach, scallions, ricotta cheese and cumin. Wonderful when served on a toasted French bun with a slice of tangy red onion and a touch of feta cheese sauce. Delicious enough for a weekend get together, or a weeknight at home with family and friends.

Turkey-Spinach Burgers
Ingredients:
- 1 lb. ground turkey
- 1 teaspoon ground cumin
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 cup part skim ricotta cheese
- 3 cups spinach leaves, chopped
- 4 scallions, ends trimmed and chopped
- 1 large egg
- For the sauce:
- 2 oz. feta cheese, crumbled
- 1 cup Greek yogurt
- 1 teaspoon extra virgin olive oil
- Salt and pepper to taste
- For serving:
- Red onion, thinly sliced
- Hamburger buns
Directions:
- In a large mixing bowl, mix together the first 8 ingredients until combined. Form into 4 hamburger patties, making an indention with your thumb in the middle of each burger. (This keeps the burgers flat during grilling.) Heat the grill, or indoor grill pan to medium-high heat. Grill the burgers, flipping once, until the center reaches a temperature of 165 degrees. Toast the hamburger buns as well.
- To make the sauce, mix together the ingredients in a small mixing bowl. Season the sauce with salt and pepper to taste. Serve each burger with sliced red onion and some of the feta sauce, on the toasted buns.
