The Perfect Fall Salad

Certain ingredients were just made to be enjoyed together.  Strawberries and cream, peas and carrots, rosemary and pork, chocolate and peanut butter….you get my drift.   To me, some of the most harmonious of Fall ingredients are apples, pecans and blue cheese.  All of those ingredients when tossed with a tender mix of greens and served with a lovely Dijon mustard vinaigrette come together to form what I call, The Perfect Fall Salad.  A delicious mix of flavors and textures that will immediately put a smile on your face.

The Perfect Fall Salad

Ingredients:

  • Mixed greens
  • 1 large apple, diced
  • Pecans
  • Blue Cheese
  • For the vinaigrette:
  • 1 Tablespoon Dijon mustard
  • ¼ cup extra virgin olive oil
  • 2 Tablespoons white wine vinegar
  • Pinch of crushed red pepper flakes
  • ¼ teaspoon salt
  • Pinch of black pepper

Directions:

  1. Divide washed and dried mixed greens on each salad plate. Top with diced apple, pecans and crumbled blue cheese. Serve with some of the vinaigrette.
  2. To make the vinaigrette, place all ingredients in a mixing bowl. Whisk together until emulsified and serve over your salad.
