Yummy. Yummy. If you are like me and love everything there is about the wondrous thing we call ‘ sandwich ‘, then you must try my Roasted Vegetable Sandwich with Pesto &
Goat Cheese. This hearty sandwich is a unique and satisfying answer to your lunchtime cravings. Perfectly roasted slices of eggplant, red onion, tomatoes, zucchini and squash sprinkled with thyme and served on lightly toasted ciabatta bread that has been shmeared with pesto sauce and tangy goat cheese. A restaurant quality sandwich that will impress and certainly satisfy your taste buds.

Roasted Vegetable Sandwich with Pesto & Goat Cheese
Ingredients:
- 1 eggplant, cut into ¼ inch rounds
- 1 squash, cut into ¼ inch rounds
- 1 zucchini, cut into ¼ inch rounds
- 1 red onion, sliced into thin rounds
- 1 yellow tomato, sliced into ¼ inch rounds
- 1 red tomato, sliced into ¼ inch rounds
- Extra virgin olive oil
- Salt & pepper
- 1 Tablespoon fresh thyme leaves, roughly chopped
- 2 ciabatta rolls, halved
- ¼ cup goat cheese, room temperature
- 2 Tablespoons pesto sauce (store bought or homemade)
- Mixed greens
Directions:
- Preheat the oven to 400 degrees. Line two baking sheets with parchment paper and divide the sliced vegetables amongst them in a single layer. Drizzle the veggies with olive oil and sprinkle with a touch of salt and pepper. Top with the roughly chopped thyme. Roast the vegetables in the preheated oven for 25 minutes, or until tender and lightly browned.
- In the meantime, lightly toast the halved ciabatta rolls. On one side of the bread spread the goat cheese and on the other, 1 Tablespoon of the pesto sauce. Place mixed greens on the bread and then the roasted vegetables. Serve warm.
