Everyone loves a meatball! I’ve also found that just about everyone loves a summertime caprese salad, so this combo is a win-win. I decided to flavor tender turkey meatballs with a hint of dried basil and minced garlic, and serve them right on top of a classic caprese salad of fresh mozzarella slices, ripe tomatoes and fresh basil. To finish the whole thing off I drizzle the serving platter with quality olive oil and a touch of tangy balsamic vinagirette. A lovely way to serve two wonderful things on one platter!

Caprese Turkey Meatballs
Ingredients:
- 1 lb. ground turkey
- 3 garlic cloves, minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon dried basil
- ½ cup Panko breadcrumbs
- 1 large egg, room temperature
- 4 oz. fresh mozzarella cheese, sliced
- 2 large ripe tomatoes, or ripe cherry tomatoes, halved
- Fresh basil
- Olive oil
- Balsamic vinegar
Directions:
- Preheat the oven to 375 degrees. Line a baking sheet with parchment or foil; spray with cooking spray.
- Combine the first 7 ingredients together in a large mixing bowl until fully combined. Form into 8 meatballs and place on the baking sheet. Bake for 25 minutes or until the internal temp has reached 165 degrees.
- On a serving platter, arrange the sliced mozzarella, tomatoes and basil. Place the meatballs on top of the salad, then drizzle everything with olive oil and balsamic vinegar. Finish off with a sprinkling of freshly ground black pepper and a touch of salt.
