On a recent trip up to Blue Ridge, GA we came upon a wonderful local orchard. Mercier Orchards, located just about 10 minutes from the town square, is not only an orchard that you can tour, but also has an incredible general store/Farmer’s market on site. Filled with local produce, baked goods, homemade cider and gifts, we couldn’t leave without a large crate of strawberries, peaches and okra.
These strawberries are so ripe and fragrant, I just knew a fresh strawberry pie was on the menu for the night we got back home. This simple yet decadent pie comes from the Taste of Home website and truly highlights the ripe berries. Simply bake your favorite crust and fill it with a lightly sweetened cream cheese mixture flavored with honey and pure vanilla extract. Top this baked filling with fresh sliced strawberries and jam, and then allow the pie to chill for a couple of hours before diving in. And when I say diving in, I mean it–there is something so wonderful about a ripe berry this time of year: perfectly sweet and divine.

It really was Leanne. Everything from the nutty whole wheat crust to the lightly sweetened cream cheese and of course, the ripe, ripe berries was fabulous! Bet it would work beautifully with raspberries or blackberries, too.
