One of our nearby Publix locations always has an incredible selection of meats. From legs of lamb to beef roasts, ground bison and an array of kabobs to choose from, they also always have some lovely cuts of veal. I just couldn’t pass up these thick veal chops last week when I was there. Looking through my spice cabinet when I got home, I decided to flavor these thick chops with coffee spice rub. A warm mixture of ground coffee and the warm taste of cinnamon, black pepper, nutmeg and a pinch of all spice I rubbed both sides of the chops with this spicy mixture before searing the chops, and then baking them in the oven along with some dry white wine. Decadent elegance–the best two words I can think of to describe these meaty delights.

Coffee-Spiced Veal Chops
Ingredients:
- 2 veal chops (1 1/2 inches thick)
- salt and pepper
- olive oil
- Coffee spice (available at http://www.savoryspiceshop.com/blends/bakers.html)
- 1/2 cup dry white wine
Directions:
- Preheat the oven to 375 degrees. Season the veal chops with salt and pepper, and rub each side with a 1/4 teaspoon of the coffee spice.
- Heat 1 teaspoon of oil in a large ovenproof saute pan over high heat. Sear the chops for 2 minutes per side or until they flip easily in the pan and are browned.
- Pour the wine into the pan with the seared chops. Bake the min the oven for 13-15 minutes or until they reach the desired temperature.
