I loved the creativity of this vegetarian version of a classic Cobb salad. Filled with cooked grains instead of a protein, the hearty salad is flavorful and filled with all of the staples of a traditional Cobb salad. Roasted cherry tomatoes, roasted scallions, creamy sliced avocado, crunchy nuts—I used chopped pecans and pearled barley since I had those on hand, and added in some crumbled blue cheese for a bit of extra flavor.
