Roasted New Potatoes with Herbs de Provence

WP_20150508_19_24_08_ProSometimes the simplest of recipes really are the best.  Take this simple side dish for example; roasted new potatoes flavored with herbs de Provence, salt, pepper and a drizzle of olive oil.  The flavors of this classic spice blend include rosemary, lavender, thyme, oregano, savory and marjoram; we use this blend on steaks before grilling, tomatoes before roasting and it adds the perfect blend of flavors.  Serve these lovely potatoes on a bed of watercress, sprinkled with micro greens, or even on your next Niçoise salad.

Roasted New Potatoes with Herbs de Provence

Ingredients:

  • ½ lb. new potatoes, quartered
  • Olive oil
  • Salt and pepper
  • Herbs de Provence
  • Micro greens or watercress, for serving

Directions:

  1. Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper or foil. Place the quartered potatoes in a single layer on the baking sheet. Drizzle them with oil, a sprinkling of salt, pepper, and herbs de Provence. Roast for 25—30 minutes or until tender. Serve with the micro greens or watercress.
