 These one-bite appetizers are elegant, flavorful and look gorgeous as well.  Simply a baby artichoke hearts roasted in olive oil and wrapped in tender smoked salmon.  The addition of thinly sliced red onion and delicate celery leaves into the involtini add a peppery crunch that really rounds out the entire flavor profile.
