‘Turmeric Chicken & Rice’

 Turmeric is a key ingredient in many Asian dishes (including curry powder), ground turmeric imparts not only a lovely, rich flavor to a multitude of savory and sweet dishes, but a remarkable hue as well.  It’s natural deep orange-yellow hue is hard to miss; in this tasty one-pot meal from Food & Wine magazine, ground turmeric is added into melting butter to color and flavor the skin of a chicken as it cooks.  The butter and the turmeric seep into the chicken skin as it crisps and is a lovely addition to the other distinct spices that go right into the rice as it cooks.  Ground cinnamon, curry powder and cumin are the other spices used in this unique dish; to balance out the rich flavors in the rice and chicken, you serve this dish with sliced cucumbers, cilantro and a dollop of creamy yogurt.
