Roasted Radishes with Burrata

This simple side dish should win a crown for its decadence.  Simple roasted radishes served on top of halved rounds of creamy, dreamy Italian Burrata cheese.  If you are not familiar with Burrata, it is basically whole milk fresh mozzarella cheese rounds filled with cream.  It is one of the most delightful cheeses out there; when you cut through it with your fork, a creamy ricotta-like filling is revealed in the cheese’s center.  The pairing of the peppery roasted radishes with the creamy Burrata cheese is simply incredible.

Roasted Radishes with Burrata

Ingredients:

  • 1 bunch of radishes, quartered
  • Olive oil
  • Salt and pepper
  • 2 rounds of Burrata

Directions:

  1. Preheat the oven to 375 degrees. Place the quartered radishes on a parchment-lined baking sheet. Drizzle with oil and season with a touch of salt and pepper. Roast, turning once with a spatula, for 20-25 minutes, or until tender and lightly browned.
  2. To serve, place the radishes on top of halved rounds of Burrata.
