‘Oven-Fried Chicken Cutlets’

 If you are like me and love fried chicken, but hate the greasy mess it leaves in your kitchen, then you must try this simple recipe, and immediately!  The simple name of this recipe does not do this recipe justice: yes, they are oven-fried chicken cutlets, but they get their crispy coating from a fragrant mixture of Panko breadcrumbs, salty Parmesan cheese, fresh rosemary, garlic powder and chopped hazelnuts.  (I can see pecans or pine nuts working well here, too.)  That combination gives you a perfectly crisp coating and a mixture of mayo and mustard give the thin cutlets their moisture.  A simple yet sophisticated chicken dish that even the kids at your table will absolutely adore!
