 Roasting a mixture of onions, red bell peppers, plum tomatoes, carrots and herbs makes for a lovely summertime soup.  Even more mouthwatering is the slightly spicy mixture of paprika and cayenne pepper that is sprinkled over the vegetables before roasting—and let’s not forget a touch of cream and the uniquely briny garnish of crisp, fried capers.  A rich vegetable-based soup that is a wonderful way to use the produce of the season, and that freezes well too.
