Mediterranean Braised Cucumbers

 Sliced cucumbers are a lovely addition to a crudité platter, a refreshing summer cocktail, and even your favorite salad.  Crisp and fresh in flavor, cucumbers are a welcomed addition to many dishes.  But have you tried cooking cucumbers?  This idea is very popular in French cooking and is an amazing way to transform cucumbers into a savory side dish.

Simply cook sliced cucumbers in a mixture of olive oil and butter until lightly browned, season with a touch of salt and pepper and away you go! I’ve taken it a step further in this recipe and tossed the cooked cucumber together with some of the best flavors of the Mediterranean: sundried tomatoes, pine nuts, and creamy feta cheese.  My Mediterranean Braised Cucumbers are irresistibly delicious.

Mediterranean Braised Cucumbers

Ingredients:

  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon unsalted butter
  • 2 cucumbers, halved lengthwise, seeds removed and sliced
  • Salt & Pepper
  • ½ cup sun-dried tomatoes, packed in oil, drained
  • ½ cup crumbled feta cheese
  • ¼ cup pine nuts, toasted

Directions:

  1. In a large sauté pan heat the oil and butter over medium heat until the butter is melted. Add the sliced cucumbers in to the pan along with a pinch of salt and pepper and sauté, stirring constantly, for 5-7 minutes or until the cucumbers are tender and lightly browned.
  2. Allow the cucumber to cool to room temperature and then toss with the remaining ingredients. Serve warm or room temperature.
