Whether served over cous cous, brown rice or even quinoa, this lovely vegetarian main dish is full of Moroccan flavors.  A tagine is a traditional North African stew-like dish cooked in a ceramic pot of the same name; hearty and exotic, this vegetarian version consists of farm fresh squash or zucchini, chickpeas, cherry tomatoes and a warm blend of cumin, coriander, cinnamon, and turmeric for a lovely yellow color.
