A flavorful homemade meatloaf is one of the most comforting dishes you can serve.  It seems that everyone automatically reverts back to childhood when a meatloaf is on the menu; when the word ‘meatloaf’ is mentioned, everyone loves to share the secrets of their mother’s meatloaf that they can’t help but compare all other meatloaves to.  (Speaking of, the secrets to my Mom’s meatloaf were a package of Knorr dried vegetable soup mix and the classic topping of Heinz ketchup…)

It is no surprise that I love the flavors of Greek food—olives, oils, cheeses, oh my.  That is why I decided to shake things up a bit with this meatloaf and incorporate those beloved flavors.  I use ground chicken in this dish, but ground turkey would work just as well.  My Greek Meatloaf with a Feta-Dill Sauce is a delicious and comforting dish; each slice is studded with red onion, capers, feta cheese, parsley and ricotta cheese.  The addition of a homemade feta cheese-Greek yogurt sauce flavored with dill adds the perfect final touch to this dish.  Feel free to also form this mixture into meatballs and bake them for an elegant small bite or passed appetizer.

Greek Meatloaf with a Feta-Dill Sauce

Ingredients:

  • 1 ½ lbs. ground chicken
  • ½ cup breadcrumbs
  • 1 small red onion, diced
  • ¼ cup parsley, chopped
  • 1 teaspoon dried basil
  • 4 oz. Feta cheese, crumbled
  • 3 Tablespoons capers, drained and rinsed
  • 2 eggs
  • 1 cup part-skim ricotta cheese
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • For the sauce:
  • 4 oz. feta cheese, crumbled
  • 1 cup Greek yogurt
  • Juice of ½ a lemon
  • 1 Tablespoon fresh dill, chopped
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch of crushed red pepper flakes

Directions:

  1. Preheat the oven to 375 degrees. Coat a loaf pan with cooking spray.
  2. In a large mixing bowl mix the ground chicken together with the remaining ingredients until well combined. Place in the loaf pan and bake in the preheated oven for 50 – 60 minutes or until the internal temperature reaches 165 degrees when tested when a meat thermometer.
  3. To make the sauce, combine the feta, yogurt and remaining ingredients in a small mixing bowl. Serve alongside the sliced meatloaf.
