‘Fresh Almonds, Zucchini, Curry & Mint’

I just read through Patricia Wells’ amazing French cookbook aptly entitled, The Paris Cookbook.  All of the recipes epitomized classic Parisian cooking at its best, but the first one I just had to make was a bit on the non-French side. Let me explain.  French in preparation, yes, this saute of cubed zucchini, almonds and fresh mint gets an unexpected flavor upgrade from yellow curry powder. The sweetness of the mint pairs beautifully with the tender zucchini, the blanched almonds and the rich flavor of the curry powder. Simple yet complex, you’ll adore this side dish and I guarantee it will become a well repeated recipe in your cooking repertoire!
