There are a couple of unique details in this roast chicken recipe that elevate the dish from tasty to incredibly tasty. A simple roast chicken is stuffed with lemon halves and seasoned with butter, salt and pepper, but in addition, the chicken roasts on top of chopped yellow onions which caramelize in the hot oven and cook in the chicken juices themselves. Secondly, the chicken is served with homemade croutons which is just brilliant–the toasted bread cubes also absorb the juices from the succulent roast chicken which makes for a decadent, very French touch in taste and presentation.
