‘Ginger Pork with Sweet Peppers’

If you enjoy larb, the traditional Thai dish of ground meat flavored with lime juice, fish sauce, and sesame oil served in lettuce wraps, then you will love this quick-and-easy stir fry. Tender ground pork is sauteed along with fresh ginger, garlic, and sweet peppers; all flavored with a touch of brown sugar and fragrant sesame oil.  I finished each dish off with a snip of fresh chives, and the recipe also calls for roasted, salted peanuts for crunch.  Served over white or brown rice, this weeknight dinner idea would also work perfectly with ground chicken, turkey or even grass-fed beef.
