‘Orange Pork with Watercress Rice’

This Vietnamese-inspired stir fry gets its depth of flavor from julienned fresh ginger, garlic, salty fish sauce, and store-bought orange marmalade.  The orange-flavored sauce melts around each individual cube of pork tenderloin and is served over a peppery white rice studded with chopped, fresh watercress. All-in-all, a fabulous weeknight recipe that comes together in no time at all and is oh-so-good for you!
