‘Chicken, Mushroom & Bok Choy Bowls’

A hearty grain bowl like this one is a satisfying and healthy dinner idea.  This particular bowl starts with cooked barley and the topping is an Asian-inspired stir fry of ground chicken, bok choy, fresh ginger and sliced mushrooms–flavored with a touch of soy sauce and crunchy nuts for added deliciousness.  A squeeze of fresh lime juice and a touch of Sriracha sauce if you desire, and dinner is served!
