Red Beans & Rice with Garlic Sausage

The sausage you choose to add into a classic dish like red beans and rice can make all the difference. You want to choose something that is not only high quality, but that adds a punch of flavor to the overall dish. Normally I use a pork or chicken andouille for this dish, but I also like a nice garlic-infused pork sausage as well. Canned red beans make this dish come together in no time, and don’t forget the trilogy! That classic Cajun mixture of onions, celery and bell pepper that brings color and aromatics to the entire pot as well. That and the hot sauce of course….

Red Beans & Rice with Garlic Sausage

Ingredients:

  • 1 Tablespoon olive oil
  • 1 Tablespoon unsalted butter
  • Pinch of crushed red pepper flakes
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 3 garlic cloves, thinly sliced or minced
  • 2 celery stalks, chopped
  • Salt and pepper
  • 3 links of sausage, Andouille or garlic-infused preferred
  • 1 bay leaf, dried
  • 1 Teaspoon fresh thyme leaves
  • ¼ cup dry white wine
  • (2) 14.5-oz. cans dark red kidney beans, drained and rinsed
  • Cajun seasoning, to taste
  • ½ cup chicken stock
  • Rice for serving
  • Hot sauce, optional

Directions:

  1. In a large Dutch oven or straight-sided sauté pan, heat the oil and butter over medium heat. Add in the crushed red pepper, chopped onion, bell pepper, garlic and celery. Season with ½ teaspoon of salt and a big grinding of black pepper. Sauté for 5-7 minutes, or until the veggies are tender and the onion translucent. Add in the sausage, bay leaf and fresh thyme leaves. Sauté for another 2 minutes.
  2. Add in the white wine and cook for 5 minutes, or until the liquid is reduced by half. Next, add the drained beans and ½ teaspoon of Cajun seasoning. Stir to combine; next add in the chicken stock. Bring to a simmer, then reduce the heat to low, cover, and cook for 20-25 minutes, stirring occasionally. Serve over warm white rice with hot sauce, if desired.
