Italian White Bean & Kale Sauté

Recipe based on Ina Garten’s ‘Italian White Beans & Escarole‘ recipe from Cooking for Jeffrey

Another foolproof recipe from the kitchen of the beloved Barefoot Contessa!  If you don’t already have Ina Garten’s latest cookbook entitled Cooking for Jeffrey (or her entire collection of cookbooks really!), what are you waiting for?  All of her recipes are elegant and super impressive, just like her cooking show and also the format and style of her cookbooks.  This specific recipe for an Italian side dish of beans and greens is just that; I used Lacinato kale instead of escarole, mixed with white beans, stock, garlic, crushed red pepper flakes and grated Pecorino and Parmesan cheese. The cheese mixes in with the flavorful cooking liquid from the beans and greens, making the whole dish decadently rich and scrumptious.  A delightful side to your favorite Italian main course!
