Yet another exceptional recipe from Fine Cooking magazine!  Flaky baked cod fillets are topped with a wonderful jam made from cherry tomatoes, red onion and crispy cooked bacon.  A topping similar to a warm bacon vinaigrette that you might find on a spinach salad, the flavorings added into the tomato-bacon mixture include Dijon mustard, peppery chives and a splash of apple cider vinaigrette.  A wonderful topping for any fish you are craving, but also a nice topping for a salad or even a crunchy slice of grilled bread.
