‘Slow-Cooker Sunday Sauce on Spaghetti’

An Italian Sunday Sauce is a slow-cooking meaty tomato sauce similar to a traditional Bolognese sauce, but the difference is the type of meats used.  They traditionally don’t use ground beef, pork or veal but shredded pork roast, Italian sausage and a touch of bacon or pancetta.  The name says it all–it originated with someone’s nonna adding whatever meat she had on hand and whatever leftover homemade tomato sauce she had on hand and the end of the week, into a pot and simmering it all day on Sunday for the family dinner.  This specific recipe uses a crock pot for cooking, but feel free to cook this sauce in a Dutch oven either stove-top or in a low-heat oven for a few hours until the meat is super tender.  Also, this recipe makes a lot of sauce (which is not a bad thing!) but keep in mind that it freezes very very well.
