‘Spaghetti with Tomato & Walnut Pesto’

This seemingly simple pasta dish actually has real depth of flavor.  Al dente spaghetti noodles are tossed with a homemade roasted tomato and walnut pesto sauce made with toasted nuts, Parmesan cheese, lemon zest and anchovy paste, along with roasted sweet tomatoes. Half of the roasted tomatoes go into the food processor and the other half are added right into the pasta, along with fresh basil and more decadent cheese. A vegetarian summertime pasta dish that really makes it hard to put down the fork!
