‘Broccoli & Brussels Sprout Slaw’

When you think ‘slaw’ the first ingredient that usually comes to mind is shredded cabbage, right?  Most of us do, but lately, a lot of other vegetables are being put to the test in unique variations on a traditional slaw.  You see a lot of recipe for a broccoli slaw, kale slaw, or even a tasty apple-jicama or carrot slaw these days.  I was turned onto this recipe with its hearty mixture of raw broccoli and Brussels sprouts, along with a handful of sliced almonds for extra crunch, my favorite Castelvetrano green olives, Parmesan cheese and a light lemon-anchovy vinaigrette.  Experiment with your favorite raw veggies with your next batch of slaw—you and your dinner guests will be glad you did.
