‘Caramelized Brussels Sprouts & Kale with Crispy Capers’

I love crispy capers as a garnish, whether on a vegetable side dish like this one, or even on a salad, pizza or even as a garnish on a big bowl of soup.  Simply cooking briny capers in a tablespoon of oil in skillet gives them a slightly toasted taste and a lovely crispy texture. In this recipe, the crispy capers are accompanied with tender baby kale, caramelized Brussels sprouts, red onions, a touch of red pepper and lemon juice to brighten the entire dish up.  Oh, and a grating of salty Parmesan cheese to finish never hurt anything either…
