Each and every bit of this vegetable curry is filled the aromatic combination of flavors found in green curry paste.  A Thai condiment made from green chiles, lemongrass and Thai ginger it is a wonderful addition to a Thai curry dish like this one, or even into the base of a vinaigrette or marinade.  A homemade curry couldn’t be easier; basically a mixture of vegetables or meats of your choice, coconut milk, curry paste, fresh herbs and squeeze of lime juice for a tart finish. This particular dish is made with cauliflower, potatoes, onions, chickpeas and green beans. A lovely and tender combination of veggies that pairs visually very well with the light green hue of the curry paste.
