This hearty vegetarian recipe makes a great Fall lunch, or a special side dish for a healthy dinner.  A sweet, baked potato filled with sautéed Swiss chard and yellow onion, served with slices of creamy avocado, a squeeze of fresh lemon juice for a fresh bite, and a sprinkling of cayenne pepper for a spicy note.  Super healthy and super-duper delicious–quite a modern spin on a classic baked potato, don’t you think?
