‘Slow Cooker Chicken Mole’

Using your slow cooker to make a traditional chicken mole is a brilliant idea (and a super delicious one at that).  Chicken Mole is a classic Mexican comfort food of shredded chicken in a flavorful chile sauce.  In this case, the sauce is made from a puree of smoked almonds, raisins, tomato paste, chipotle chiles in adobe sauce, garlic and sweet onions. Flavored with ground cumin and ground cinnamon, the only garnishes you need once the chicken is cooked to tender perfection is lime juice, sliced radishes, cilantro and a dollop of creamy sour cream if you like.
